Recipe Ingredients for RAW Turtle Truffles

240 ml Dates, pitted
240 ml Pine nuts
1/2 teaspoon Vanilla extract
240 ml Dates, pitted
120 ml Raisins or dried cherries
60 ml Coconut oil, warmed to liquid
150 ml Cocoa or carob powder
1/4 teaspoon Cinnamon
120 ml Pecans for garnish

Recipe Directions for RAW Turtle Truffles

  1. -Instruction-

  2. Caramel

  3. 1. Loosely separate the dates, and place the dates, pine nuts, and vanilla extract in a food processor outfitted with the ?S? blade. Process until smooth.

  4. 2. Place in the freezer while making the fudge.

  5. Fudge

  6. 1. Loosely separate the dates and place the dates, raisins and coconut oil in a food processor outfitted with the ?S? blade. Process until smooth.

  7. 2. Add the cocoa powder (or carob) and cinnamon and process again.

  8. 3. Roll the caramel into balls, using 1 teaspoon of the mixture for each.

  9. 4. Do the same for the fudge, also using 1 teaspoon of mixture for each ball.

  10. 5. Using your thumb, make a depression in the center of a ball of fudge large enough to fit a ball of caramel inside.

  11. 6. Holding the two together, carefully pull the fudge coating up around the caramel, and press a perfect pecan half on top.

  12. 7. Repeat this process until all the candies are formed, and chill for at least 1 hour.

  13. 8. Serve each truffle in a paper candy cup.

  14. 9. Store in an airtight container in the refrigerator of freezer for up to one month.
