Quick and easy no-cook sauce for penne pasta. Flavored with oregano, garlic, and capers.

Recipe Ingredients for Raw Tomato Sauce for Pasta with Avocado

8 oz penne pasta
1 1/2 lbs tomatoes
2 cloves garlic, minced
2 T. capers
2 T. minced fresh oregano
1/4 c. olive oil
1 t. salt
1/2 t. red pepper flakes
1 c. avocado or 1 medium
1/8 c. lemon juice (2 T.)

Recipe Directions for Raw Tomato Sauce for Pasta with Avocado

  1. Core and cut tomatoes into 1/2 inch cubes. Toss with minced garlic, oregano, oil, salt and red pepper flakes in bowl large enough to hold the pasta.

  2. Peel and core avocado. Cut into 1/4 inch cubes. Mix with lemon juice.

  3. Cook the pasta. Drain and toss with tomato mixture. Add avocado/lemon juice and toss.

  4. Serve with freshly grated parmesan cheese.
