This hummus has a bit more of a light, refreshing feel and taste compared to the oil versions you typically see. This could easily be modified and adjusted for any type of Hummus.

Recipe Ingredients for Raw Sprouted Chickpea Hummus

12 oz. Chickpeas, sprouted
3 T Lemon Juice
3 cloves Garlic
1 Jalapeno pepper, without seeds
1/2 t Sea Salt
1 t Ground Cumin
1/4 t Paprika
1/4 cup water, add to get your desired consistency

Recipe Directions for Raw Sprouted Chickpea Hummus

  1. How to sprout dried chickpeas: Soak 1/2 cup of dried chickpeas in water for a full day, drain next day and rinse off chickpeas every 6 -12 hours if possible. They should sprout to 1/4? long in 2-4 days, so plan ahead for this recipe. This can be done with store bought chickpeas, but is much better with fresher chickpeas than those that have sat on a grocery store shelf. 

  2. After they are sprouted, put them in a vitamix or food processor along with the rest of the ingredients except for the water. Blend together and add water gradually until you get the desired consistency.

  3. Pair with celery sticks, bell pepper slivers, or cucumber slices for a light snack or your favorite homemade bread for something a little more substantial.
