Good light version of rice. I'm sure there are plenty more out there that are better but this one is quite plain and doesn't take away from an stir fry that you serve on it.

Recipe Ingredients for Raw 'rice'

1 1/2 cups Cauliflower.
2 teaspoons Cashew Butter, Plain
2 tablespoon tamari
2 tablespoon nutritional yeast
2 tablespoon apple cider vinegar

Recipe Directions for Raw 'rice'

  1. Place cauliflower into food processor and process until it has a rice type size.

  2. Add in some cashew butter (maybe try one teaspoon at a time), apple cider vinegar (to taste) and nutritional yeast (to taste).

  3. Process until all ingredients are mixed.

  4. Taste and add more flavouring if your mix calls for it.

  5. Be creative and make a raw risotto out of it, or serve a stir fry ontop!
