Raw, vegan take on neopolitan ice cream... in pie form!

Recipe Ingredients for Raw neopolitan pie

2 cups Almonds
1 cup Dates
2 avocados
2/3 c cocoa powder
3 serving Agave Nectar
3 T shredded coconut
2 bananas
1 1/2 c cashews
1 1/2 t lemon juice
2 t vanilla extract
2 c frozen strawberries
1 T dark chocolate

Recipe Directions for Raw neopolitan pie

  1. Soak dates for an hour. Drain, reserving water.

  2. Process almonds until finely ground.

  3. Add dates, half vanilla and half cocoa powder and process until mixture comes together. Press crust into a pie pan and store in freezer.

  4. Process avocado flesh, remaining cocoa, 3 tablespoons agave and 1/4 cup of the soaking water until smooth. Smooth onto crust and sprinkle with half coconut flakes. Return to freezer.

  5. Process cashews until finely ground. Add bananas, 1/2 teaspoon lemon juice and remaining vanilla and process until smooth and creamy, adding soaking water as necessary. Spread ontop of chocolate pie layer. Return to freezer.

  6. Process remaining cashews until finely ground. Add strawberries, 1 tablespoon agave and remaining lemon juice. Process until creamy, adding soaking water as necessary.

  7. Top with grated chocolate and coconut.

  8. Freeze until firm. Serve cold.
