Raw Lasange Recipe

If the thought of raw lasagne freaks you out, think of this as a vegetable terrine.

Recipe Ingredients for Raw Lasange

1 c raw pine nuts
1 c raw cashews
2 T lemon juice
1 t salt
6 c raw spinach
1 t fresh oregano
1 t salt
2 T olive oil
2 c sun-dried tomatoes
1 tomato
1/4 onion
2 T lemon juice
1/8 c olive oil
1 large date
1 clove garlic
1 1/2 t salt
1/2 t dried oregano
3/4 t fresh rosemary
1/4 t red pepper flakes
3 c basil leaves
1/2 c raw pine nuts
4 tablespoons extra-virgin olive oil
1/4 t sea salt
1 pinch black pepper
2 medium zucchini
3 medium tomatoes

Recipe Directions for Raw Lasange

  1. Soak the nuts in water for an hour. Soak the dried tomatoes in water for an hour. Toss spinach, oregano, salt & oil in a large bowl and leave to wilt for an hour.

  2. Drain the nuts, and place nuts, lemon juice, and salt in a food processor, and pulse a few times, until thoroughly combined. Gradually add 6 tablespoons water, and pulse until the texture becomes fluffy, like ricotta. Place in a bowl, cover with plastic wrap, and set aside.

  3. Place ingredients from sun-dried tomatoes to red pepper flakes in a blender, and process until smooth.

  4. Place ingredients from basil leaves to black pepper in a blender, and process until smooth.

  5. Using a mandoline or vegetable peeler, shave zucchini lengthwise into very thin slices. Cut the tomatoes in half, and each half into thin slices. Line the bottom of a 9-by-13-inch baking dish with a layer of zucchini slices. Spread 1⁄3 of the tomato sauce over it, and top with small dollops of ?ricotta? and pesto, using 1⁄3 of each. Layer on 1⁄3 of the tomato slices and press down gently. Add another layer of zucchini and repeat twice more with the tomato sauce, pesto, ricotta, and tomato slices. Serve immediately, or cover with plastic and let sit at room temperature for a few hours. Garnish with basil.
