Recipe Ingredients for RAW Gazpacho Soup

2 1/2 Roma tomatoes, seeded and cut into 1/2-inch pieces
1/4 red bell pepper, cut into 1/2-inch pieces
1/4 cucumber, peeled, seeded, and cut into 1/2-inch pieces
1 onion, green, cut into 1/2-inch pieces
1 tablespoon parsley, fresh, chopped
2 teaspoons extra virgin olive oil
1/2 teaspoon garlic, crushed (1 clove)
1/4 teaspoon salt
1 dash black pepper
1 dash cayenne

Recipe Directions for RAW Gazpacho Soup

  1. Place the tomatoes, bell pepper, cucumber, green onion, parsley, olive oil, garlic, salt, pepper, and cayenne in a food processor fitted with the S blade.

  2. Process until blended but still chunky.

  3. Stop occasionally to scrape down the sides of the bowl with a rubber spatula.

  4. Serve immediately.

  5. For chilled soup, refrigerate for 30 minutes before serving.
