This raw fruit pudding tart is a delicious, cold, vegan summer treat. A spontaneous recipe inspired by many other raw desserts, I made a quadruple batch last night to share with a variety of folks at a house meeting. It disappeared immediately, and I was really surprised by how many people (omnivores, vegetarians and vegans) asked for the recipe. The crust is really good, and I think the combination of different nuts could be explored. A variety of different fruits could also be used for the filling - next time, I want to try slivered peach with banana mango pudding! Note: I freeze ripe bananas to use in smoothies and fillings like this; it reduces the necessary 'chill' time and makes the pudding firmer from the start.

Recipe Ingredients for Raw Fruit Pudding Tart

1/4 cups almonds
1/4 cups cashews
1/2 cups dates
1 kiwi
1 large banana
2 large strawberries

Recipe Directions for Raw Fruit Pudding Tart

  1. Puree nuts and dates in food processor.

  2. Press mixture into shallow dish, forming a firm crust.

  3. Slice kiwi and place in a thin layer across date nut mixture.

  4. Puree banana and strawberry. Spoon filling in an even layer across kiwi.

  5. Garnish with a slice or two of fresh strawberry and an almond.

  6. Chill 2-4 hours. Enjoy!
