This is a delicious no bake, vegan, soy-free, gluten-free "cheese"cake, made without refined sugars. It's made with walnuts, cashews, cocoa, dates and banana. The filling is slightly sweet, with a hint of banana and cocoa; it?s creamy with the consistency of ?real? dairy cheesecake, but is lighter and less rich. The base is chewy, fudgy and totally chocolatey ? complementing the filing extremely well. As a side note - raw-food purists wouldn't call this raw (as cashews are used).

Recipe Ingredients for Raw Chocolate Cheesecake

110 grams Walnuts, English
40 grams Cocoa, Dry Powder, Unsweetened
200 grams Pitted Dates
13 grams Vanilla Extract
1 dash Salt, Table
360 grams Cashew Nuts
1.5 tsp Vanilla Extract
1 large (8" to 8-7/8" long) Bananas
15 grams Lemon Juice
45 grams Water
1 dash Salt, Table
40 grams Cocoa, Dry Powder, Unsweetened
75 grams Pitted Dates

Recipe Directions for Raw Chocolate Cheesecake

  1. For the Base: In a food processor, blitz the walnuts until you get coarse crumbs. Add 40g cocoa powder, 200g pitted dates, 1tbs vanilla extract and pinch of salt, and blitz until well incorporated. The mixture will be still quite crumbly, do not fear.

  2. Press the base mix into 36 cupcake papers, I use a muffin tin to help them keep their shape. Set aside.

  3. For the Filling: Wipe out the food processor bowl, then blitz the remaining ingredients until well incorporated and smooth. Taste the sweetness and add more dates as you wish. Pour into the cupcake papers and smooth out using a wet spatula or spoon. Place into the freezer for 2-3 hours.

  4. You can store the cheesecake in the freezer. The 'cakes' thaw in 1 hour.
