doubled recipe for original raw cookies, coconut added for texture and presentation

Recipe Ingredients for Raw Chocolate Banana Cookies, for sharing

3/4 c. walnuts
1/2 c. cocoa powder
1 c. dates
1 c. currants
2 tablespoons water
1 1/2 c. rolled oats
1 tablespoon pure maple syrup
2 bananas
4 tablespoons shredded coconut

Recipe Directions for Raw Chocolate Banana Cookies, for sharing

Make sure the dates are soft, either from being purchased soft and fresh, or from soaking them in water for 30 minutes or more. Blend all ingredients in a good quality blender. Add no more than two additional tablespoons of water, if needed. Keep working at it--it's a thick dough. Stop periodically to push down dough next to blades with a spatula, then keep mixing. The finished texture will be a little like Play Doh. Form dough into walnut-sized balls. Roll each ball in shredded coconut to coat it. (The coconut is optional; the cookies taste fine without the coconut. You can also omit the maple syrup without sacrificing the taste too much. It does taste better with the maple syrup added, though.) Refrigerate cookies for at least two hours before serving.
