a raw vegan cheesecake that is better than regular cheesecake

Recipe Ingredients for Raw Cheesecake

3 cups cashews
3/4 cup honey
1/2 cup coconut oil
3/4 cup lemon juice
1 tsp vanilla
1 cup almonds
1 cup macadamia nuts
1 cup dates
1 tsp cinnamon
1 pinch salt

Recipe Directions for Raw Cheesecake

  1. soak the cashews in water a few hours or overnight. drain and put in blender with honey, coconut oil, vanilla and lemon juice. Process until smooth. May have to scrape the blender a few times.

  2. In a food processor, pulse pecans, macadamia nuts and dates until chunky. Press into the bottom of a springform pan. Pour the cashew mixture on top.

  3. Place in freezer for a few hours until firm. Thaw in refrigerator before serving.
