wonderful fall soup, very warming and beautiful goldenrod color, you could also serve this with a drizzle of cinnamon coconut cream

Recipe Ingredients for raw butternut squash soup with ginger and coconut

1 1/2 cups butternut squash
2 cups coconut water
1/2 small onion
1 clove garlic
1 tbs orange zest
1 juice of 1 orange
1 inch knob ginger
1 tbs coconut oil
1/2 tsp cinnamon
1/2 tsp black pepper
1/4 tsp nutmeg
1 tsp sea salt
1 ear corn cut off cob

Recipe Directions for raw butternut squash soup with ginger and coconut

  1. blend all but the corn on the cob in a high speed blender until very smooth

  2. add corn to individual soup bowls

  3. serve with love
