Recipe Ingredients for Raw Apple Muffins

2 cups apples, diced
1/2 cup sugar
1 egg, beaten lightly
1/4 cup corn oil
1 tsp. vanilla extract
1 cup whole wheat flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1/2 cup raisins
1/2 cup walnut, broken

Recipe Directions for Raw Apple Muffins

  1. Preheat oven to 350 degrees F. Use vegetable spray to grease 8 muffin tins.

  2. Mix apples and sugar in one bowl and set aside.

  3. Put egg, oil, and vanilla in a second bowl and stir to blend well.

  4. Put flour, baking soda, sinnamon, and salt in a third bowl. Stir mixture with a fork until well blended.

  5. Stir the egg mixture into the apples and sugar, and blend thoroughly.

  6. Sprinkle the flour mixture over the apple mixture and blend well (the batter will be stiff).

  7. Sprinkle the raisins and walnuts over the batter and mix until evenly distributed.

  8. Spoon into muffin tins.

  9. Bake for about 25 minutes. Serve warm.
