I stole this right from the Food Network.com, except, because of the reviews, I put in the wonton wrappers instead of the dough she [Giada] used.

Recipe Ingredients for Ravioli Caprese


Dough:
1 Wonton Wrappers

Filling:
3/4 cup whole milk ricotta cheese
1 egg
1/2 shredded chicken breast
1/4 cup grated Parmesan
2 tablespoons finely chopped fresh basil leaves
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Sauce:
3 tablespoons extra-virgin olive oil
3 tablespoons chopped fresh basil leaves
2 teaspoons grated lemon zest
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Recipe Directions for Ravioli Caprese

  1. For the dough:

  2. Use wonton wrappers.

  3. For the filling:

  4. Combine all the ingredients in a medium bowl and stir to combine.

  5. Use the wonton wrappers as directed.

  6. Place the finished ravioli on a baking tray and continue forming the remaining ravioli.

  7. Bring a large pot of salted water to a boil over high heat. Add half the ravioli and cook until the ravioli float -: stirring occasionally, about 3 to 4 minutes. Drain into a large bowl and cook the remaining ravioli.

  8. For the Sauce:

  9. Pour the olive oil over the cooked ravioli. Add the basil, lemon zest, salt, and pepper. Gently toss to coat and serve immediately.
