Delicious vegetable tacos. Instead of the 2nd green bell pepper use poblano pepper. Also use a red and a green jalapeno for colour contrast.

Recipe Ingredients for Raven's Veggie Tacos

1/2 cup Green Bell Pepper (diced)
1/2 cup Green Bell Pepper (diced)
1/2 cup Yellow Squash (diced)
2 tablespoons Jalapeno (diced)
2 tablespoons Jalapeno (diced)
1 medium Onion (diced)
1/2 cup Cilantro
1 tablespoon Lime juice
1 tablespoon Olive Oil
1 tablespoon Cumin
1/2 tablespoon Coriander
1/2 tablespoon Salt
1/2 teaspoon Oregano
1/2 teaspoon Black Pepper
1/4 teaspoon Chili Powder
1/2 teaspoon Garlic Powder
15 ounces Diced Tomato
6 Corn Tortillas
6 teaspoons Sour Cream
2 ounces Cheddar Cheese

Recipe Directions for Raven's Veggie Tacos

  1. Caramelize the onion in the olive oil.

  2. Add everything except for the can of tomato and cook until tender.

  3. Add the tomato and simmer until most of the liquid is gone.

  4. Serve in corn tortillas with cheese and sour cream.
