Recipe Ingredients for Raven & Rayne's Italian Wedding Soup

1/2 tbsp olive oil
1 medium onion, diced
3 tsp garlic, crushed and diced
1/2 lb ground chicken
1 tsp garlic powder
1 tsp oregano
1 pinch cayenne pepper
1/4 tsp thyme
3 tsp breadcrumbs
1/4 tsp salt
15 grams bacon, minced
1/4 tsp red pepper flakes
7 oz baby spinach, fresh
3 cups cannellini beans
1000 grams chicken broth, 2 14 oz cans
2 tbsp (Classico) Basil Pesto
1 tsp lemon zest
2 tbsp lemon juice

Recipe Directions for Raven & Rayne's Italian Wedding Soup

  1. Heat oil in cast iron dutch oven.

  2. Cook two thirds of the onion, potatoes, two thirds of the bacon and the garlic until onions are translucent and potatoes are browned.

  3. Add chicken broth.

  4. To make the meatballs: mince one third of the onion and add to the ground chicken along with the salt, garlic powder, oregano, cayenne pepper, thyme, breadcrumbs and the remaining bacon. Form into 18 balls.

  5. Add meatballs and cook for 9 minutes.

  6. Add spinach; cook until wilted.

  7. Add the beans, red pepper flakes, lemon juice and zest; cook until potatoes are tender.

  8. Turn off heat and stir in pesto.
