my ridiculously easy version of ratatoullie

Recipe Ingredients for ratatoullie

1 can (10.75 oz) Soup, Tomato
1 medium (2" dia, 5" long, raw) Sweetpotato
1 medium Squash, Summer, Zucchini, Includes Skin
1 cup, chopped Peppers, Sweet, Red
1 cup, chopped Onions
1 eggplant, peeled (yield from 1-1/4 lb) Eggplant
1 tbsp Olive Oil
0.25 cup, shredded Cheddar Cheese
0.25 cup, dry, yields Couscous, Cooked

Recipe Directions for ratatoullie

preheat oven to 375. Poor soup into baking tray. Cut up onions, sweet potato, zuchini, pepper and eggplant and toss them into the baking pan. drizzle olive oil over top. Mix so vegetables are all covered with tomato soup. cook for 45-50 minutes. serve over cooked cous cous and sprinkle with cheese to make it yummy.
