Vegetarian Ratatoulle. It comes out like a goulash or a mush, but it is really really tasty. Good with pasta, Buckwheat groats, or bread.

Recipe Ingredients for Ratatoulle

1/4 cup olive oil
2 small onions
3 red peppers
1 medium eggplant
1 medium zuccini
1 cup shredded cabbage
1/8 cup chopped garlic
8 medium tomatoes

Recipe Directions for Ratatoulle

  1. Saute the onions and cabbage in the oil.

  2. When they become clear looking - add the peppers, sliced or chopped.

  3. Add the eggplant sliced in coins or smaller. Allow to saute with the onions and cabbage until the eggplant becomes soft.

  4. Add the zuccini, cut into long spears and the tomatoes, chopped.

  5. Allow the entire mix to simmer for about 15 - 20 minutes. Add chopped garlic (the more the merrier) in for the last 10 minutes. Add chopped thyme if you have it.

  6. At the very very end, add some fresh basil, if you have it.
