Recipe Ingredients for Ratatouille- without tomatoes

1 eggplant
1/4 onion
1/4 green pepper
1 zucchini
2 cloves garlic
1 tbsp canola oil
1 cup Mini Peeled Carrots
2 roasted red peppers, chopped

Recipe Directions for Ratatouille- without tomatoes

Peel and slice the eggplant, lightly salt, and allow moisture to be released for ten to 20 minutes. Saute garlic until aromatic, then add onions, saute for few minutes at med to med high, then add carrots and peppers. Saute for 5 minutes, then add the eggplant and zucchini. Add desired spices (oregano, basil, salt, pepper). Cover and saute on med heat for ten minutes. Stir, cover, and saute for another ten minutes. add the peppers and saute uncovered for a couple of minutes.
