Basic Ratatouille with white beans for protein (vegetarian main course)

Recipe Ingredients for Ratatouille with White Beans

1 large Onions
3 carrot (7-1/2") Carrots
2 medium Squash, Summer, Zucchini, Includes Skin
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 medium Orange Hothouse Bell Pepper
1 eggplant, peeled (yield from 1-1/4 lb) Eggplant
5 clove Garlic
6 oz Tomato Paste
1 3/4 cup Certified Organic Vegetable Broth
4 tsp The Original Pizza Peppers Crushed Chile Flakes
5 tomato Tomatoes, Red, Ripe
2 cup Beans
2 cup Beans Cannellini
4 tbsp Benefiber Soluble Dietary Fiber Medical Food
2 c spinach (raw)

Recipe Directions for Ratatouille with White Beans

  1. The onion should be coarsely chopped (or, if using boiling onions, simply peeled), the eggplant diced into 1-inch cubes, the bell peppers quartered and sliced, the zucchinis cut into 1/4- inch slices, the cucumber peeled seeded and diced, the hot pepper finely minced, and the cloves of garlic peeled and put through a press.

  2. Heat the olive oil in a very large skillet and add to it the minced red pepper and garlic. After 2 to 3 minutes, add the onion. Stir for a few minutes more and then throw in the zucchini, eggplant, and the bell pepper. Toss and stir with two spoons until everything seems to be as evenly coated in oil as possible.

  3. Mix together in a bowl: the hot vegetable broth and the tomato paste. Pour this over the vegetables in the skillet. Add the cucumber.

  4. Cook the vegetables slowly in this liquid, stirring occasionally until the sauce is almost gone ? about 1 hour. The vegetables should be very tender but not falling apart.

  5. While cooking, cut the tomatoes into eighths. A minute or two before taking the ratatouille off the fire, stir in the tomatoes.
