Recipe Ingredients for Ratatouille Stew

1 t olive oil
1/2 c onions, chopped
1 green pepper, chopped
3 garlic cloves, minced
28 oz tomatoes, whole-hand crushed
2 c eggplant, cubed
1 med zuchini, chopped
1 c water
1 oz spaghetti, broken
1 t basil
3/4 t oregano
1/4 t salt
1/4 t pepper

Recipe Directions for Ratatouille Stew

Coat dutch oven w no-stick spray; add oil and set over med heat. When hot add onions, peppers, and garlic; cook and stir 5 min. Add tomatoes (with juice) eggplant, zuchini, water, spaghetti, basil, and oregano. Bring to boil and lower heat to med. Cover and cook 25 min, til thick. Add salt and pepper to taste.
