Version of the classic French dish made without the lashings of olive oil.

Recipe Ingredients for Ratatouille

1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
1 tbsp Olive Oil
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 large Onions
1 clove Garlic
1 small Squash, Summer, Zucchini, Includes Skin
1 tsp Sea Salt
5 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 tbsp Basil, Fresh

Recipe Directions for Ratatouille

Chop indregients, sautee in olive oil, tomatoes last, add salt, cook until all ingredients are tender.
