Recipe Ingredients for Ratatouille

1 eggplant
1 onion
2 cloves garlic
1 red pepper
3 zucchini
350 g tomatoes
3 stalks celery

Recipe Directions for Ratatouille

  1. Preheat grill. Grill aubergine slices

  2. Cook onion for about 10 mins in large saucepan, until lightly golden

  3. Add tomatoes, zucchini, herbs, salt. Simmer gently, covered over a low heat for about 20 mins. Uncover and continue cooking for 20-25 mins.
