Great recipe, very filling and easy to prepare

Recipe Ingredients for Ratatouille

400 g Italian Cherry Tomatoes
375 g eggplant, peeled and diced
55 g red bell pepper
80 g red onion, diced
135 g green bell pepper, diced
140 g Mushrooms Crimini
60 g extra-virgin olive oil

Recipe Directions for Ratatouille

  1. Cut all vegetables into chunks.

  2. Toss with the olive oil.

  3. Add the canned tomatoes and toss again.

  4. Spoon into a casserole dish.

  5. Preheat oven to 350F.

  6. Bake ratatouille until vegetables test done, basting them occasionally with the pan juices.

  7. This tastes great hot and cold. I add a little lemon pepper or squeeze fresh lime juice over it before serving.
