Recipe Ingredients for Ratatouille

1 large raw Zucchini
1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 medium (2-1/2" dia) Onions
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
8 tbsp Olive Oil
1 tsp Salt, Table
1 tsp Pepper, Black

Recipe Directions for Ratatouille

Cook eggplant, zucchini, any bell pepper, onion, then tomatoes (all seperately). 5-8 minutes each. Finally simmer with smashed garlic, salt and pepper for 20 minutes.
