Traditional summer side from the south of France. You need tomatoes and onions and any other ripe veggie found at the market: zucchini, eggplant, bell pepper . Don't forget garlic and thyme. Good warm or cold, with red meat, or in sandwiches

Recipe Ingredients for ratatouille

330 grams Tomatoes, Red, Ripe
200 grams Eggplant
250 grams Squash, Summer, Zucchini, Includes Skin
67 1/2 grams Olive Oil
1 medium raw Onion Red

Recipe Directions for ratatouille

  1. brown all vegetables in olive oil in a thick bottom pan

  2. begin with onion and garlic and end with tomatoes

  3. when tomatoes are browned, add all the other vegetables back in the pot

  4. cover and let simmer for 30 minutes,
