Recipe Ingredients for Ratatouille

2 large Squash, Summer, Zucchini, Includes Skin
1 eggplant, peeled (yield from 1-1/4 lb) Eggplant
2 tbsp Olive Oil
1 large Onions
2 cup, pieces or slices Mushrooms
1 Medium Tomatoes
3 serving tomatoes, diced green pepper and onion (del monte), 1/2 cup
5 grams Sea Salt
1 cup Parmesan, Grated Cheese
1 tsp California Style Minced Garlic made from Fresh Garlic

Recipe Directions for Ratatouille

Cut eggplant into half-inch cubes. Slice onion. Preheat oven to 350 degrees. Heat 1 T. olive oil in skillet. Add garlic and saute until slightly browned. Add onions and eggplant and cook, stirring occasionally, until eggplant is soft, about 10 minutes. Salt lightly to taste. Put 1 T. olive oil into casserole dish. Spread oil over bottom and sides of casserole. Add eggplant mixture, then cover with a layer of Parmesan cheese. Layer sliced zucchini, light salt, cheese. Keep layering with mushrooms and tomatoes, each followed by Parmesan cheese. End with Parmesan cheese on top. Cook in oven for 45 minutes..
