Recipe Ingredients for Ratatouille

2 medium (2-1/2" dia) Onions
3 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
2 tbsp Olive Oil
2 medium Squash, Summer, Zucchini, Includes Skin
2 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
5 clove Garlic
2 tsp Thyme, Fresh
1 serving Sea Salt
1 dash Pepper, Black
8 serving Tomatoes, Crushed, Canned

Recipe Directions for Ratatouille

  1. Heat oil

  2. Sliver onions and add to pan and stur

  3. Cut bell peppers into 1 inch chunks and add, stir

  4. Cut eggplant into 1 inch pieces and add, stir

  5. Cut zucchini into 1 inch pieces and add, stir

  6. Crush garlic, add and stir

  7. Add tomatoes, stir

  8. Add seasoning, stir

  9. Simmer for 40 minutes
