Ratatouille Recipe

Vegetable dish. Adapted from NYT Natural Foods Cookbook, p.139

Recipe Ingredients for Ratatouille

4 Japanese eggplants, sliced
1/3 cup olive oil
3 garlic cloves, minced
1 medium onion, finely chopped
3 zucchini, sliced
2 tbsp flour
1 1/2 green peppers, sliced
5 roma tomatoes, diced

Recipe Directions for Ratatouille

  1. Sprinkle the eggplant slices with salt & set aside.

  2. Heat the oil in a skillet & saute the garlic and onion in it until tender but not browned. Toss the zucchini with one T of the flour and add to the skillet.

  3. Rinse the eggplant slices, pat dry and dust with remaining flour. Cook over med. heat 5 minutes. Cook and cover 45 mins. Add the green pepper and tomatoes and cook, uncovered, until all vegetables are tender & excess liquid has evaporated.

  4. Serve warm or cold, garnished with olives.
