a great all veggie side dish. Can be eaten as a meal too.

Recipe Ingredients for ratatouille

3 squash, summer, small
3 zucchini, small
1/2 onion
5 tomatoes, small
1 garlic clove
1 T basil
1/2 T oregano
1 salt
1 pepper
1 T Olive Oil, extra virgin
1 t Splenda
28 oz Crushed Tomatoes

Recipe Directions for ratatouille

  1. Slice onions very thinly

  2. Cube squash, zucchini, and tomatoes

  3. Mince 1 or 2 cloves of garlic

  4. Heat up saute pan with the Olive Oil.

  5. Add garlic and onion, saute until onion is translucent and your kitchen is smelling fabulous.

  6. Add tomatoes, basil, oregano salt, pepper and lower heat, stirring occasionally.

  7. Once tomatoes have cooked down, add remaining ingredients and cook until tender.

  8. Sprinkle one cup with 1 T Parmesan cheese.
