This is a low fat ratatouille. The entire recipe is only about 230 calories.

Recipe Ingredients for Ratatouille

1 cup eggplant (cubed)
1 T. olive oil
2 T. onion (chopped)
1/2 cup yellow bell pepper (chopped)
1 clove garlic
1 cup zucchini (cubed, not peeled)
2 fresh tomatoes
1 dash basil
1 dash parsley
1 dash oregano
1 dash salt

Recipe Directions for Ratatouille

  1. Gently saute onion and peppers in olive oil for about 5 minutes.

  2. Add vegetables (except tomatoes).

  3. Stir, cover, and cook on low for about 30 minutes.

  4. Add tomatoes, herbs and spices.

  5. Cook another 5 minutes.
