mmmmmmm - eggplant doesn't freeze well !

Recipe Ingredients for Ratatouille

1/2 T. olive oil
1/2 cup chopped onion
2 cups chopped eggplant, with skin
2 cups chopped zucchini, with skin
15 oz can diced tomatoes, low salt
1 large red bell pepper, chopped
1 tsp dried thyme
1/2 tsp salt
1 tsp parsley, dried
3 cloves garlic

Recipe Directions for Ratatouille

Sautee onion in oil. Add 1 clove garlic and heat a minute or so. Add rest of ingredients and simmer x 20 min.
