Recipe Ingredients for Ratatouille

1 Eggplant
1 Squash
2 Onion
8 Tomatoes
2 Courgettes

Recipe Directions for Ratatouille

  1. Chop everything roughly, toss together with a splash of olive oil into a large oven proof dish.

  2. Cook in pre-heated oven (200 degrees) until cooked through.

  3. Season and serve.

  4. Once cooled can be stored in fridge for 2-3 days and re-heated in the microwave.
