Recipe Ingredients for Ratatouille

4 oz rotini
1 lb eggplant
3 zucchini
1 tsp salt
1 tbsp olive oil
1 onion
8 oz mushrooms, sliced
3 cloves garlic
29 oz diced tomatoes
3/4 cup mozzarella cheese
1/3 cup parmesan cheese
1 tbsp basil
1 tbsp parsley
1/2 tsp pepper

Recipe Directions for Ratatouille

  1. Chop the eggplant and zucchini, place in a colander, and toss with the salt. Let stand for 30 minutes.

  2. Sautee the onion and garlic in olive oil until the onion is translucent over medium heat. Add the eggplant and zucchini mixture, the tomatoes, mushrooms, basil, parsley, and pepper; let it cook until the water has cooked away.

  3. Cook the pasta according to package directions, omitting salt and fat.

  4. Coat a glass baking dish with cooking spray. Lay down pasta and cover with eggplant mixture. Top with cheese, and bake at 450 for about 15 minutes, or until the cheese is brown and bubbly as you like it to be!
