brilliant either as a sauce over whole grain pasta for the family - or as a big kind of soupy meal for yourself at dinner! vege's are interchangable - i just go with whatever is in my fridge beans can be added too, to make a heartier meal.

Recipe Ingredients for Ratatouille

1 cup canned tomatoes
1 courgette
6 small button mushrooms
3 cloves garlic
1/2 small onion
1/2 cup spinach
1/4 cup capsicum
2 tsp olive oil
1 tsp dried basil
1 tsp dried oregano
1 tsp dried rosemary
1/4 cup red wine

Recipe Directions for Ratatouille

  1. dice all veges into bite sized pieces and mince garlic.

  2. saute onion, garlic and mushrooms for a few minutes in a medium heated pan.

  3. add all veges to the pan along with the herbs, tomatoes and wine - let simmer for around 10 minutes stirring occaisionally.

  4. serve up and enjoy
