Traditional, quick meal. Serve on a bed of brown rice or couscous for a complete meal.

Recipe Ingredients for Ratatouille

15 oz diced tomatoes
1 onion
2 cloves of garlic, diced
3 small eggplant
3 yellow squash
2 zucchini
1 green pepper
1 T olive oil
1 t basil
1/2 t oregano

Recipe Directions for Ratatouille

  1. In a saute or stirfry pan, heat olive oil over medium flame.

  2. Cook onion until soft.

  3. Add remaining veggies and herbs; toss.

  4. Turn up flame to med-hi and cook, tossing occasionally, until hot thru. Do not over cook.

  5. Serve immediately.

  6. Reheats well.
