Provencal vegetable stew - good served luke warm with grilled meats, fish, poultry. This recipe keeps the identity of the ingredients and does not turn into a mushy mess. I don't incude aubergine (eggplant) as my partner hates it.

Recipe Ingredients for Ratatouille

1 medium onion
2 cloves garlic
1 tbsp olive oil
1 medium red pepper
6 oz mushrooms
6 oz courgette
14 oz canned tomatoes

Recipe Directions for Ratatouille

  1. Gently saute the chopped onions and garlic in the olive oil for 10 minutes. Stir occasionally to prevent burning.

  2. Add the coarsely sliced or chopped courgette, mushroom and red pepper. Simmer on low heat with tightly fitting lid.

  3. Add the well drained and chopped tomatoes and season with salt, pepper and dried Italian seasoning or basil.

  4. Simmer gently for 15 minutes uncovered
