Ratatouille with chickpeas and couscous

Recipe Ingredients for Ratatouille

2 small zucchini
2 small yellow squash
1 red bell pepper
1 eggplant
2 tbsp olive oil
28 ounces canned tomatoes, crushed
1 tsp ground thyme
1 tsp salt
1/4 tsp pepper
14 1/2 ounces chickpeas, canned
2 cups couscous
2 cups water

Recipe Directions for Ratatouille

  1. Slice first 4 ingredients. Heat oil and cook first 3 ingredients for 10 minutes. Add eggplant. Cook for 10 minutes. Stir in tomatoes and seasonings. Drain chickpeas and add to pan. Cook for 5 minutes.

  2. Prepare couscous with water. Serve together.
