Recipe Ingredients for Ratatouille

4 cups eggplant
2 cups tomato
2 cup zucchini
1 1/2 cups onion
2 T garlic
2 T olive oil

Recipe Directions for Ratatouille

  1. sautee onions and garlic in oil

  2. when softening, add eggplant

  3. when mostly softened, add zucchini & tomatoes

  4. stew all together till all vegetables are completely soft adn flavors fully mingled.
