Recipe Ingredients for Ratatouille

4 cups zuccini
15 oz diced tomato
4 tomato

Recipe Directions for Ratatouille

  1. use 2 small yellow zuccini and 2 small green zuccini and plum tomatos.

  2. Pre-heat oven to 350. In a shallow oval or round baking dish, pour the diced tomatos. Season as desired. Herbs d'Provance is the traditional seasoning for Ratatouille, but fresh basil is also nice.

  3. slice tomatos and zuccini about 1/8th of an inch thick. Layer from the outside in, green, yellow, tomato, repeat, in a ring all the way around the pan. You can do concentric rings or a spiral.

  4. Stand back and be amazed at how pretty it is. Cover with tinfoil, bake for an hour. Serve.
