Homemade ratatouille! There is very little protein in this dish, so if you are going to serve it as a main dish I highly suggest serving with some form of protein(like cheese) or adding beans. I added chick peas to it for my lunch today and it was quite delightful!

Recipe Ingredients for Ratatouille

1 large Squash, Summer, Zucchini, Includes Skin
3 Medium Tomatoes
4 small Onions
12 grams Garlic
1 medium raw Bell Pepper Red
2 cup, chopped Peppers, Sweet, Green
12 oz Tomato Sauce
0.25 cup Olive Oil
2 cup, sliced Squash, Summer, Crookneck And Straightneck
1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
2 tsp Vegetable Base
6 oz Water
2.5 cup Rice, Brown, Medium-grain, Cooked
1 tsp Pepper, Black

Recipe Directions for Ratatouille

  1. In a large pot, heat the olive oil. Add onions and garlic and saute until they are just starting to brown.

  2. Add the eggplant, and cook until it is about half done.

  3. Add the peppers, squash and zucchini and cook for about 5-7 minutes.

  4. Add the tomatoes, tomato sauce, vegetable base and spices.

  5. Add water as needed.

  6. The dish is done when it the vegetables are tender(but not squishy!). It should be the consistency of a thick soup/stew when it is done.

  7. Serve over rice.

  8. This takes about 45-55 minutes to make (prep included).
