Recipe Ingredients for Ratatouille

1 eggplant, peeled (yield from 1-1/4 lb) Eggplant
1 medium Squash, Summer, Zucchini, Includes Skin
1 medium Squash, Summer, All Varieties
8 oz Mushrooms
5 large whole (3" dia) Tomatoes, Red, Ripe
2 medium (2-1/2" dia) Onions
10 clove Garlic
2 tbsp Olive Oil
1 cup leaves, whole Basil, Fresh
3 tsp Oregano
1 tbsp Dill Weed, Dried
2 tbsp Tomato Paste
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
10 strips Peppers, Sweet, Green
1 cup Soup, Chicken Broth

Recipe Directions for Ratatouille

Partially peel eggplant. Cut all vegetables approximately same size. Place all vegetables in large roasting pan and drizzle with evoo and a light sprinkle of salt. Roast in 350 oven for approx. 45 minutes. Transfer to stock pot and add tomato paste, herbs and chicken stock and/or water. Simmer until vegetables are desired texture. This can be served as main with pasta or as a side.
