eggplant stew that can be eaten as a side dish, over pasta or rice, inside eggs or crepes

Recipe Ingredients for Ratatouille

1/4 cup Olive Oil
2 cup, chopped Onions
3 clove Garlic
2 cup, pieces or slices Mushrooms
2 cup, sliced Peppers, Sweet, Green
1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
2 large whole (3" dia) Tomatoes, Red, Ripe
15 1/2 oz Tomatoes
1 serving low sodium v8 spicy hot

Recipe Directions for Ratatouille

  1. Heat olive oil in large skillet.

  2. chop onions, garlic, mushrooms, green pepper and tomatoes.

  3. saute onion and garlic in olive oil until transparent and starting to brown, approx 5-10 minutes.

  4. chop eggplant into 1 inch cubes.

  5. Add 15.5 oz can of no salt diced tomatoes, 1 cup of low sodium V8 spicy hot and all vegetables to onion and garlic, cover and cook, stirring occasionally, until all vegetables are tender and stew has cooked down, approximately 30-40 minutes.

  6. Serve as a side dish, over eggs, or in crepes.
