Recipe Ingredients for ratatouille quiche

1 pie crust
2 large eggplant
1/4 cup olive oil
2 medium onions
2 cloves garlic
3 zucchini
3 green bell peppers
1 lb tomatoes
4 oz reduced fat mozzarella
2 tbsp parsley
1 tbsp basil

Recipe Directions for ratatouille quiche

  1. SPrinkle eggplant with salt and drain 1 hour.

  2. Preheat oven - 350.

  3. Rinse and drain eggplant. Chop.

  4. Heat oil. Add onions, garlic, eggplant, zucchini, bell peppers and saute 5-7 min. Add tomatoes, bay leaf, and thyme. Mix and simmer 10-15 min. Season with SP.

  5. Spoon into pie crust. Top with mozzarella and prinkle with parsley and basil. Serve hot.
