Recipe Ingredients for Ratatouille quiche

5 large Egg, Whole
2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
0.25 medium (2-1/2" dia) Onions
1 cup, sliced Squash, Summer, All Varieties
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
4 oz Fontinella Cheese
8 fl oz Almond Breeze Unsweetened
1 crust Pillsbury Pie Crusts All Ready Rolled

Recipe Directions for Ratatouille quiche

  1. Slice and sautée onions and pepper until tender

  2. Meanwhile lay crust into pan, crimp edges, prick with fork and bake at 450F about 10 minutes.

  3. Whisk together eggs, milk, cheese, with black pepper, salt, and a pinch of nutmeg

  4. Spread veggies across crust starting with sautée mix the squash

  5. Pour custard over then lay in tomatoes

  6. Bake at 400F for 30 min if crust looks too dark lower to 350F and continue to bake 15 min more

  7. Let cool 10 minutes
