Serve Ratatouille over 16 oz prepared polenta rounds.

Recipe Ingredients for RATATOUILLE ON POLENTA ROUNDS

8 oz tomato, sun dried (not packed in oil)
1 T olive oil
1 onion, coarsely chopped
5 garlic cloves, finely chopped
1 eggplant , unpeeled & cubed (3/4#)
1 zucchini, cubed (1/2#)
1 green bell pepper, seeded & cut into 1" pieces
1 red bell pepper, seeded & cut into 1" pieces
28 oz tomatoes, can crushed
1 tsp sugar
1/2 tsp salt
1/4 tsp black pepper, freshly ground
1 tbsp dried basil
1/4 cup parmesan cheese, grated over polenta

Recipe Directions for RATATOUILLE ON POLENTA ROUNDS

  1. Soak sun dried tomatoes in warm water ~ 15min..

  2. Heat oil in dutch oven add onion and garlic. Saute ~ 7min.

  3. Drain sun dried tomatoes and add all but last 3 ingredients. Reduce heat and simmer ~ 30min. Stir in basil last 2-3 min.

  4. Meanwhile preheat broiler. Slice polenta into 12 rounds. Arrange on sprayed baking sheet. Sprinkle with parmesan cheese & broil until cheese is golden.

  5. Serve the ratatouille over the polenta rounds.

  6. (NOTE: Add kidney beans to make this a main course.)
