zucchini, eggplant, and squash in marinara sauce

Recipe Ingredients for ratatouille pasta

1 tablespoon olive oil
2 small zucchini
2 small yellow squash
1 medium eggplant
1/2 medium onion
2 cloves garlic
750 g marinara sauce
16 oz cannelini beans
12 ounce Whole Wheat Rotini

Recipe Directions for ratatouille pasta

  1. start water for the pasta

  2. heat olive oil in pan, add onion and sautee til soft about 3 minutes

  3. add garlic and sautee til fragrant - about 30 seconds

  4. add vegetables and sautee til starting to soften - about 5 minutes

  5. add marinara sauce and any herbs you like and allow to simmer while pasta cooks - about 10 minutes
