Delicious vegetable dish for all occasions! It can be served as cold and as a starter along with crispy French bread. It can be served as main dish with rice pilav or plain pasta. It can be served as side dish along with red meat or poultry. The best drink with this lovely dish is homemade, fruity red wine!

Recipe Ingredients for Ratatouille from Olga's Healthy Choice

600 g onion
500 g potatoes
450 g sweet potatoes
600 g zucchini
480 g aubergine
600 g tomatoes
80 g tomato paste
500 g bell pepper
2 tbsp olive oil
1 tsp sea salt
1 tsp chili pepper
1 cup cheese
4 cloves garlic
1 tsp lemon zest
1 tsp ginger
2 cups water

Recipe Directions for Ratatouille from Olga's Healthy Choice

  1. Clean, and dice and slice of the vegetables.

  2. Grate tomatoes and mixed with tomato paste.

  3. In a large pan, pure olive oil, add sliced onions and fry for 5 minutes. Then add garlic cloves, lemon zest and ginger. After 5 minutes frying add potatoes and fry for 5 minutes then add sweet potatoes and fry another 5 minutes on medium heated oven.

  4. Then add water and bring to boil, then add bell peppers. Let it boil 5 minutes and then add zucchini and let it boil 5 minutes more. Then add other spices and aubergine, tomato and cover the lid of the pan and let it simmer on a low heat oven for about 15-20 minutes.

  5. Do not over cook the vegetables.

  6. Move the pan from the oven and pure or lay the cheese

  7. slices while the food is hot. Cover the lid and let it rest for 15 minutes.
