Ratatouille Niçoise without bell peppers

Recipe Ingredients for Ratatouille Niçoise Sans Poivron

500 grams Aubergine
2 large raw Zucchini
300 grams Mushrooms
400 grams Tomatoes
5 tbsp Olive Oil
3 medium (2-1/2" dia) Onions
3 grams Salt, Table
6 dash Pepper, Black
1 tsp Paprika
1 tsp Wasabi Powder
2 fish Anchovy Fillets
63 grams Tomato Puree
1 inch Garlic Paste
0.5 grams Premium Selection Herbes De Provence

Recipe Directions for Ratatouille Niçoise Sans Poivron

  1. Heat the a good 6-9 tbsp oil in a very large pan.

  2. Slice and chop the onions then saute with the garlic until soft but not too brown.

  3. Cut all vegetables in to chunky pieces. Make sure they are not too small otherwise they will turn to mush.

  4. Add the vegetables top the pan and stir to coat all the vegetables in the oil and onions.

  5. Fry for a few minutes until the courgettes and aubergine start to brown a little.

  6. Add the tomatoes and anchovies, and season with the salt, pepper, paprika, herbs and wasabi powder.

  7. Cover pan and simmer gently for 30 minutes on a low heat. Stir occasionally.

  8. Eat hot with a crunchy green salad or very well chilled.
