1 cup, chopped(124 g) Squash, Summer, Zucchini, Includes Skin

Recipe Directions for Ratatouille (Homemade)

  1. 1.)Combine Tomato Puree, chopped onions, and garlic on bottom of dish.

  2. 2.) Line dish with eggplant, squash and zucchini.

  3. 3.) Drizzle 2tsp of olive oil to top, cover with parchment paper, and bake at 375degrees in preheated oven for 45minutes.

  4. 4.) Serve over rice, couscous, or pasta.
